Southern Lady Cake

1 {18 1/4 ounce} orange supreme cake mix
1/3 cup sugar
2 tablespoons all-purpose flour
1 cup sour cream
2/3 cup vegetable oil
1/2 teaspoon orange extract
4 eggs
1 {11 ounce} can mandarin oranges, well drained

PREHEAT oven to 350 degrees. SPRAY a 12-cup tube pan with cooking spray, or grease and dust with flour. IN A LARGE mixing bowl of an electric mixer, combine the cake mix, sugar, and flour; then add the sour cream, vegetable oil, and orange extract, mixing at low speed.

ADD the eggs one at a time. INCREASE speed to medium and beat for 2 minutes. STIR in the mandarin oranges until they are well distributed. POUR batter into the prepared tube pan. BAKE for 45 to 50 minutes, or until a cake tester inserted inot the cake comes out clean. WHEN done, remove the cake from the oven and allow to cool in the pan for about 15 minutes. Then invert the cooled cake onto a large plate or wire rack.

Frosting: 2 tablespoons of orange juice to 1 cup of confectioners' sugar. Enjoy! {Southern Lady Magazine Winter 2000}
