Chilled Mixed Fruit Soup

1 cup cranberry cocktail juice
1/2 cup orange juice
1/4 tsp. vanilla extract
1 cup apple juice {Simply Apple is fabulous}
1/2 cup pineapple juice
1/2 cup strawberries
1 cup coarsely cut peaches
1 cup bananas
1/2 cup each: chopped bananas, seedless grapes, pineapple chunks, peaches and melon balls.

In a food processor, puree first 8 ingredients. Keep chilled. When ready to serve, add remaining fruit to the mixture. Serve in soup bowls, garnish with fresh mint leaves. Yield: 4 cups
