Praise JESUS!!

Thank you Lord for helping me and my son through this horrible ice storm. We thought we were going to freeze to death.......I did not worry until the 35th hour.....now all is working this Saturday morning and I am so very very thankful. Jesus does provide and care for his children. People will let you down believe me........but JESUS never will.

Please make sure that you keep supplies on hand, dura logs which some of mine would not light and batteries and some of mine would not work fresh out of the package so Duracell will be on my list in a few days to keep on hand.......they are worth it in price. Our town did not know how to handle and our tv station was rude when you called for help and did not give out any information to help me............by the time they stopped complaining and telling me what they could not do they could have given me a name of a shelter.......I pray I never go through anything like what we did again in my lifetime. I did survive along with my precious son. Thank you JESUS.......you never leave us.

Burrito Casserole

1 {32 oz.} package beef and bean burritos {see below}
1 {14 oz.} can mild enchilada sauce
1 1/2 cups shredded cheddar cheese, Sargento
1 {2.25 oz.} can black olives, drained
1 1/2 cups diced tomato
4 cups shredded iceberg lettuce {about 1/2 head}

Line burritos in a single layer in a 13x9-inch microwave-safe dish. Microwave burritos on high, for 6-8 minutes, or until heated through. Pour enchilada sauce over the burritos. Sprinkle cheese over teh enchilada sauce. Microwave burrits for 1 to 2 minutes, or until

Tea Time

Fillings for tea sandwiches. Always cut off the crust. Cucumber and cream cheese is the aristocrat way of having tea sandwiches but here are some other fillings that you might enjoy too.

*Egg salad and you can add chives.
*Tomato with lemon mayo and cracked pepper. {I add a bit of lemon juice to my mayo or Miracle Whip for a nice flavor}.
*Thin sliced ham and cheese or just cheese and mayo or Miracle Whip.
*Salmon....smoked
*Jam and butter
*Peanut butter and banana

Million Dollar Pound Cake

1 pound butter
3 cups sugar
3/4 cup of sweet milk
6 eggs
4 cups flour
1/2 teaspoon almond extract
1 teaspoon vanilla

Cream butter and sugar gradually; add flavorings, add eggs, one at a time, mixing after each addition. Sift flour 3 times....{I don't alternate flour and milk, adding small amounts at a time}. THIS IS FROM THE PERSON THAT GAVE ME THE RECIPE.

Bake about one hour and thirty minutes or until toothpick shows it's done, at 325 degrees. If using two loaf pans, cook only an hour or so. Test, of course.

Gasoline

Be sure to close the cap to your gas. If yours is damaged then purchase a new one to keep your gas in your tank, not loosing gas. You want a tight seal.

Do not top off....ever.....When pumping gas use the slow flow of gas. If you have snow or ice on your car...remove it to save gas.
Sensitive to milk? Adding chocolate will make it less likely to cause gas problems. {Woman's World}.

Gas issues....chewing gum and drinking from a straw can cause this problem. Untreated postnasal drip. Who would have thought this?

Heavenly Nonfat Chocolate Honey Dip

1 cup nonfat sour cream
1/2 cup honey
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla

Combine all ingredients in medium bowl until well blended. Cover and refrigerate until ready to serve. Serve with assorted fruits and chunks of angel food cake. Makes about 1 1/2 cups.
Calories 130 for 1/4 cup. Sodium 63mg. Dietary Fiber 2g Carbohydrate 31g

Heavenly Nonfat Chocolate Honey Dip

Honey Honey

Classic Honey Flan
3 eggs, beaten
1 1/2 cups 2% low fat milk
1/2 cup honey, divided
1 teaspoon Vanilla
1/4 teaspoon ground cinnamon

Combine eggs, milk, 1/4 cup honey and vanilla. Beat until mixed but not foamy. Combine remaining 1/4 cup honey and cinnamon in small bowl; mix well. Place 4 {6 ounce} custard cups in 8-inch square baking dish. Spoon 1 tablespoon honey-cinnamon mixture into each custard cup; divide egg mixture into each custard cup. Place baking dish on middle rack of oven, pour boiling water into baking dish around custard cups to 1 inch depth. Bake at 325 degrees 30-45 minutes or until knife inserted near center comes out clean. Serve warm or cold. Loosen edges of individual custards with spatula or knife; invert onto dessert plates. ENJOY!

Amaretto Frosting

Great on cupcakes!

1/2 cup butter, softened
1 {7oz.} jar marshmallow creme
2 3/4 cups confectioners' sugar
2 tablespoons almond flavoring

In a medium bowl, beat butter and marshmallow creme at medium speed with an electric mixer until smooth. Gradually beat in confectioners' sugar. Add almond flavoring, beating until smooth. Makes around 2 1/2 cups. RECIPE CALLS for Almond flavored liqueur.......since I don't use alcohol I am using the almond flavoring.

Paula Deen's Old Fashioned Pot Roast w/Vegetable Medley

Makes about 6 servings

1 (6-pound) beef sirloin roast
1 tablespoon kosher salt
1 tablespoon ground black pepper
6 cloves garlic, peeled
1 cup beef broth
1 (16 oz) package baby carrots
1 (1 pound) package fingerling potatoes, cut horizontally in half
1 large yellow onion, cut into eighths

1 a 6-quart electric slow cooker, add roast. Sprinkle evenly with salt and pepper; add garlic and beef broth. Cover, and cook on low for 6 hours. Add carrots, potatoes, and onion. Cook for two hours longer.

I have to buy myself a slow cooker........this sounds delicious and I think I could make this.......

Winter Drinks from Paula Deen

From her January/February 2009 issue...I found these wonderful recipes.

Cherry Chocolate Coffee Float
3 scoops of chocolate chip ice cream
1/2 cup hot espresso (I will have to use decaf coffee or Folgers half and half coffee)
1 tablespoon cherry-flavored syrup
Garnish: whipped cream, maraschino cherry, shaved chocolate

In a serving glass or mug, place ice cream. Slowly pour hot espresso over ice cream; drizzle with cherry syrup. Garnish with whipped cream, cherry, and shaved chocolate. Fabulous V

Choclate Malt Coffee
1/2 cup chocolate milk, warmed
1/2 cup hot espresso.....(I will use hot coffee)
2 tablespoons malted milk powder
1 teaspoon vanilla-flavored syrup
Garnish: chocolate whipped topping, shaved chocolate

In a serving glass or mug, combine warmed chocolate milk, hot espresso or (coffee per me), malted milk powder, and syrup. Stir gently to combine. Garnish with chocolate whipped topping and shaved chocolate.

Caramel-Cinnamon Late
3/4 cup hot espresso (for me part decaf coffee)
1/2 cup half and half
2 teaspoons caramel-flavored syrup
1 1/2 teaspoons cinnamon-flavored syrup
Garnish: Whipped cream and cinnamon stick

In a serving glass or mug, combine hot espresso, hal-and-half, carmel syrup, and cinnamon syrup. Stir gently to combine. Garnish with whipped cream and cinnamon stick.

Our Clothing from Me and Martha Stewart

Back in the late 90's........I worked with Martha Stewarts secretary for an event that came to the hotel I was working for. Regardless of what people say, Martha Stewart is a nice woman and she is very smart. She was very kind to me........I met her for the first time the morning of the event.......she was speaking at a luncheon for Breast Cancer. Then I joined her in a workshop speech. The menu was prepared by Martha and our fabulous chef who now ownes his own fabulous restaurant. I was so lucky to meet all the people I did when I was in the social circuit. Here are some tips from Martha and me about clothing care.

Cotton my favorite fabric along with linen becomes stronger when wet, but Wool weakens, so handle wool with extra care when washing. Yes you can wash some wools. I wash in cold with gentle Wool Light and dry on drying rack on on a towel. Sweaters, lingerie, and silks look, feel and smell the best when washed by hand.

Ironing in a circular motion can stretch a fabric. Always move the iron back and forth with the grain of fabric.

I love love love monograms.....Keep a monogram or other embroidery crisp and distinct by ironing it properly. Face down, on a thick terry cloth towel. The raised monogram, nestled in the terry cloth, will not be crushed or flatened beneath the pressure of the iron. This goes for hankies too. Then iron on the right side tyring not to touch the monogram. Sometimes I have too.....I don't like the wrinkles around it.......

When buying a man's suit........regardless of the size of the hand, a man's jacket sleeve always ends five {5} inches from the tip of his thumb, per Martha Stewart. Do make sure your husband is comfortable with that length. European designers believe in showing the wrist bone, cut their sleeves shorter than American designers.

Men's trousers....The narrower the trousers, the shorter they should be, to avoid ungainly fabric pileup on top of the shoes. The more bunchy the break, the shorter the line of the pants. As a rule, do whatever makes the trousers look longer from the front. Be sure and get your tailors advice too........Martha Stewart Clothskeeping Magazine.

Results of Rejection

My cousin Pam is teaching a class based on Joyce Meyer's Root of Bitterness I think that is the name of it...tonight she discussed Root Of Rejection. As I was taking notes, I had to ask her several times what she said and she went slow for me. I did have some light tears when she kept calling off things that are "results of rejection". I had no way of knowing these things are from rejection. At some point or in our lives growing up if we had rejection here are the results of that rejection until we are delivered by Jesus Christ.

Bitterness, self pitty, rebellion, escape {like there is a pink elephant in the room and we walk around it pretending its not there}. Guilt, poor self image, poverty, hopelessness, defensiveness, distrust, competitve until the point that its over done, trying to be perfect.

See what rejection can do to us? As you think about this writing and look at the results of rejection.....take time to reflect about your life and were these things in your life. I know we have all had rejection at some point. People even grow up with rejection from an early age. Some people have heard they were a mistake in the mothers pregnancy. Some parents have said we wanted a girl and had you or we wanted a boy and had you. I was not wanting to get pregnant but I did anyway and kept you. Adoption, abandonment, abused, being ignored, peer rejection, unfaithfullness and physical defects. Feelings of rejection are so strong and hard to overcome.

DON'T let the way someone treats you determine your worth! Never get to that point. JESUS died for your sins and he loves you no matter how you are right now or in the past and in the future he will always love you. The bible says to love our neighbor as ourselves.....what a shame many don't even love themselves. You are value to God........love yourself.........then you can love others.

I pray that anyone that reads this blog and has experienced rejection will be lifted up to their feet from JESUS.........that you will have joy and let JESUS be a part of your life. You will never find anyone that will love you like JESUS does. Victoria

Carnations~~up to three weeks--the water really smells though. Change all the time.

Mums~~3 weeks but you must scrape the stem ends to make them last longer.

Roses~~up to 10 days.....Red will die faster. Light colors in roses live longer.

Peonies~~one of my favorites can last up to 10 days make sure the blooms are tight when you buy them.

Tulips~~5-7 days..make sure stems are firm.

Breakfast Dish From Martha

1 can green chilies, drained
16 ounce package of sharp cheddar cheese
4 eggs beaten and mix with 1/4 cup milk

Add all together and bake at 350 degrees for 30-45 minutes.
{Ovens vary, just make sure its done in the middle}.......This is fabulous!

Friendships That Are Good For You

This topic could have me writing for weeks. I am sure all of us have trusted who we thought was our friend even for years and taken back when they were dishonest or caused us trouble. Praise JESUS he covers his children through all things. I have had my share of being hurt badly with friendships; one lasted 24 years. I forgave many times but decided after the last time I was so mistreated; it was time to walk away.....I forgave....but that would be the last time I would ever be mistreated again by her. I want friends that are blessings and not users. We are to forgive. We don't have to be mistreated. She was my friend that got away. I pray for her all the time for healing in her body and I pray for her salvation. I know that if she lives for JESUS I will hear from her again. I sent her a pretty card giving regrets for anything I did to hurt her. I have been able to forgive her through the help of JESUS CHRIST and I really want the best for her.

Today I am careful about who I chose to be in my circle of friends. I lean more to JESUS than to friends..........JESUS is our best friend and will never leave us or lie to us or disappoint us. When we pray and we get a "no" from JESUS on what we have asked for.......its because he knows our future and is the only one that has our best interest in his heart. What comfort that we can have faith and know that JESUS will never fail us. That would be great to have a friend like that.

2009 Hair and Makeup

Spring is around the corner.....from Paris.......Brows are stronger this year. NATURAL.....pale lips are in. {Now, if you have yellowish teeth or brownish teeth, going natural on your lips will not be attractive for you.....I won't be able to have natural lips}.

French twist...so big for the spring. I love that look. If you have waves in your hair this will be so pretty. Tiny headbands are in. Liners that are soft. Light shadow and black eyeliner.......you will have to judge your own skin and age to be able to pull this off and some women over 50 can do this....... Natural skin.......not heavy makeup. For my age........I wear a full coverage or medium coverage because of the redness around my nose and discoloration of my skin but when my makeup is applied it looks natural.

Our Words

Our words are to be a gift to someone~~nothing else. No mean words, hateful, disrespect. Our words are to be grace, otherwise then just don't talk. We don't know what impact our words will have on someone. You may save a life one day just by smiling and being kind. Someone could be on the edge of taking their life due to the things in their life and they don't know JESUS. To someone hurting and has bad news.......a smile and hello could mean the world to them. We live in a harsh America....with no moral values. I enjoy someone smiling at me and saying a kind word. I promise you, it will make you feel good too.

Pretty Sugar Cubes

Make your own decorated sugar cubes. Visit your grocery store and purchase sugar cubes. Stop off at a cake decorating store or your bakery and buy sugar flowers or rose buds...they are usually little cost.......you want to apply the sugar flower to the sugar cube. Mix filtered water with some confectioners sugar and a tiny amount of water. This will be the glue for your flower sticking to the sugar cube. These make wonderful gifts and will look splendid at your tea for you or for friends.

Lemon Curd

A wonderful sweet lemon butter to be placed on muffins, toast and crumpets.

3 large lemons
5 eggs
1 cup granulated sugar
8 tablespoons unsalted butter

Grate the lemon rinds and set aside. {Be sure to use Fit Fruit and Vegetable Wash or like kind.}
Squeeze the juice and put into a blender or food processor. Add the remaining ingredients and process until smooth. Pour the mixture into a very heavy sauce pan or the top half of a double broiler. Stir in the lemon rind and cook over very low heat or over simmering water for about 10 minutes, until thickened. Stir the mixture with a wire whisk if it appears lumpy. Chill the lemon curd before serving; it becomes thicker as it cools. Yield: 1 /12 cups

Tea For Me or Tea For Two

Heavenshire Cream
12-14 servings

1 cup of whipping cream
1 8 oz. package cream cheese, softened
1/2 cup powdered sugar
1 8 oz. carton sour cream

In medium mixing bowl, beat whipping cream until stiff peaks form. In a seperate bowl, beat cream cheese until smooth. Add powdered sugar and sour cream. Beat until smooth and fluffy. Scripture Read for Today

Deuteronomy 8

Chilled Mixed Fruit Soup

1 cup cranberry cocktail juice
1/2 cup orange juice
1/4 tsp. vanilla extract
1 cup apple juice {Simply Apple is fabulous}
1/2 cup pineapple juice
1/2 cup strawberries
1 cup coarsely cut peaches
1 cup bananas
1/2 cup each: chopped bananas, seedless grapes, pineapple chunks, peaches and melon balls.

In a food processor, puree first 8 ingredients. Keep chilled. When ready to serve, add remaining fruit to the mixture. Serve in soup bowls, garnish with fresh mint leaves. Yield: 4 cups

Mint Chocolate Dipped Apricots

In top double boiler, melt mint chocolate chips over medium heat. Using tongs, dip dried apricots into chocolate to coat. Place on waxed paper until ready to serve.

Tea Time Ice Cream Soda

1 1/2 cups boiling water
6 tea bags
1/4 cup sugar
3 cups apple juice chilled {Simply Apple is the best}
3 cups ginger ale, chilled
Butter pecan, pistachio or ice cream of choice

Pour water over tea bags. Steep for 5 minutes. Remove tea bags. Stir in sugar. Cool. In a large pitcher, combine tea and juice. Just before serving, add ginger ale and top with 1 scoop of ice cream. Yield: 8 servings

Tea Tea Tea

I just love tea....I had stopped tea for a bit and got into coffee...now I am back to tea and I love it. It is great to be back in the life of bliss with tea. I will share with you recipes and tips. I hope that you can join your friends and church and ladies events and have a "spot of tea".

Watercress and Cheddar Sandwiches

1 bunch of watercress, finely chopped
1/2 cup mayonnaise
1/2 cup cream cheese, softened
16 slices of bread {wheat please} always remove crust
8 large slices of cheddar cheese

COMBINE watercress with mayonnaise and cream cheese. SPREAD layer of cream cheese mixture on half of the bread. ADD a slice of cheddar cheese to each and another layer of spread. TOP with remaining bread. Cut each sandwich in half. Yield: 16 {You could make these smaller}.

Smoked Chicken and Walnut Salad Sandwiches

2 whole smoked chicken breasts
1/4 cup chopped walnuts
1/4 tsp. fresh thyme {if possible}
1/8 tsp. fresh garlic
1/2 cup mayonnaise
Salt and pepper to taste
30 slices of bread, with crusts removed

Puree all ingredients, except bread, in a food processor or blender I guess would work. Spread mixture on half the bread. Top with remaining slices. Cut each sandwich in half. Yield 30
You can also cut in smaller sizes.

Bake Free Oatmeal Cookies

2 cups sugar

4 tablespoons cocoa

2 teaspoons vanilla

1/2 cup milk

2 1/2 cups oatmeal

1/2 cup peanut butter

1 stick butter

1/2 cup nuts, optional



Cook sugar, milk, butter and cocoa for 1 1/2 minutes after it reaches a full rolling boil. Remove from heat and add remaining ingredients. Blend well. Spoon on waxed paper or pour into a buttered pan and cut into squares. Great for a church function.

Mexican Chicken

Cook in skillet 4 boneless skinless chicken breasts.

The recipe does not call for which type oil but I will use olive oil on low heat. It will take some time but worth it....you can't cook olive oil on high tempatures.

Mix together:
1 can cream of mushroom soup
1 can cream of chicken soup
1 can fiesta nacho cheese soup
1 can rotel
ADD THIS TO CHICKEN

LAYER in pan any flavor tortilla chips.

Next add soup and chicken mixture
Next add chedder cheese (shredded) 1-2 packages of cheese

You can repeat layers if you wish. BAKE at 350 degrees around 30 minutes until cheese is brown. Enjoy

Southern Lady Cake

1 {18 1/4 ounce} orange supreme cake mix
1/3 cup sugar
2 tablespoons all-purpose flour
1 cup sour cream
2/3 cup vegetable oil
1/2 teaspoon orange extract
4 eggs
1 {11 ounce} can mandarin oranges, well drained

PREHEAT oven to 350 degrees. SPRAY a 12-cup tube pan with cooking spray, or grease and dust with flour. IN A LARGE mixing bowl of an electric mixer, combine the cake mix, sugar, and flour; then add the sour cream, vegetable oil, and orange extract, mixing at low speed.

ADD the eggs one at a time. INCREASE speed to medium and beat for 2 minutes. STIR in the mandarin oranges until they are well distributed. POUR batter into the prepared tube pan. BAKE for 45 to 50 minutes, or until a cake tester inserted inot the cake comes out clean. WHEN done, remove the cake from the oven and allow to cool in the pan for about 15 minutes. Then invert the cooled cake onto a large plate or wire rack.

Frosting: 2 tablespoons of orange juice to 1 cup of confectioners' sugar. Enjoy! {Southern Lady Magazine Winter 2000}

Happy New Year

It's here! 2009. A new year of discoveries and fun with family and friends but first putting JESUS as our main focus. I am looking forward to working on my blog more this year. Remember as you start off 2009 to praise JESUS for who he is and know that he loves you. He knows we get weary and tired........he is our comfort and shield. No matter what we will face this year, Jesus will walk through it with us. We are not alone. Never are we alone. He is always willing to hear our prayers and to be involved in our lives. He wants us to always get closer to him and give him attention. To really know him.........his love is more than you will ever understand or more than you could ever give. For God to send his son to die for everyone that has ever been born.........so that we could invite him into our heart and be saved.......{instructions Romans 10:5-13} and to live with him forever in this fabulous place he has for us, Heaven.

I pray each one will wake up with thanksgiving in their hearts and say the Lord's Prayer each morning.......that you will open you bible so Jesus can talk to you.......that you take this year to really watch flowers grow, plant flowers by seeds, be in the sun, start a garden and meet new people........travel down roads you have not been before and take time to breathe the air and feel the wind on your face. To watch the animals and beautiful birds and look for the rainbows and know the clouds by name. Smile at a stranger. Ask Jesus to help you look through people with his eyes. That you love more this year than you have ever loved before. I pray you dream and never loose your dreams. Keep your eyes focused on Jesus and you will never be sorry you did.

For those that have never been at death........believe me.........you don't know life until you have been at death. Be thankful for each day and every blessing you have. Make a list everytime you think of a blessing and when you have a sad day........take a look at that list you made and I believe you will rejoice in the Lord. Life is really precious. We have work to do for Jesus.........he wants all the lost to be saved so they too can be with JESUS forever. For those that pray to Our Heavenly Father in Jesus name..........write down your prayers........date them..........fold them and put them in a pretty jar or coffee can..........every three months or six months........open that lid and see all of the prayers JESUS answered for you...even the most simple requests........by the end of 2009.......you will be amazed at all you ask for and received as a gift from JESUS CHRIST. You will find, I do believe that he has answered 98% of your prayers and remember the ones you don't think he answered.......JESUS did.......they were NO for your benefit. Praise him for the NO's he gave you........it was for your GOOD.
