2009

The year is just about over and all of us should be starting fresh in 2009. I love birthdays and February for Valentine's Day. January 1, I will be giving my time on this site about Tea {January is Hot Tea Month in the USA}. Years ago I was so into TEA and had so much knowledge, I studied tea and traveled to tea rooms.......I want to return to tea.......so I will be giving recipes. What fun to have a Valentine Tea Party in 2009. Much fun readings to come. Enjoy your Christmas Day and weekend. New Year is a few days away.

Christmas Teas

With the ice still on my driveway and roads around my home.....I made myself a wonderful cup of hot tea. Before you use them. let apples share the task of decorating your home for the holidays. Mound an assortment of applies in pretty bowls and tuck in a few springs of holly, juniper, or rosemary for a stunning centerpiece.

I love beautiful wrapping when giving a gift..........it so makes the gift even more special. Here are some gift wrapping ideas.........from Christmas with Victoria 1998..........

Pape-Doily Wraps
For a lacy effect, tape square, round, or rectangular paper doilies around gifts wrapped in solid paper. Weave ribbon through the holes in a the doily and tie it in a bow. Fold a square doily's corners to its center and glue 3-4 in place for a custom envelope to hold a photograph, poem, or note.

Fabric Envelopes
This is a treasure to give. Create fabric envelopes to hold photographs, tickets, jewelry, gift card. For a pattern, unfold a paper envelope and trace its shape onto 2-pieces of scrap fabric and a piece of lightweight fusible web. Following the manufacturer's instructions for the fusible web, fuse the web onto the wrong side of the fabric piece intended for the outside of the envelope. Remove the paper backing from the fusible web and fuse the outside fabric to the remaining fabric piece {the envelope lining}. Using an intact paper envelope as a guide, fold the side flaps toward the center. Then fold the bottom flap up. Secure the bottom flap to the side flaps, using strips of fusible web. Trim the envelopes with cording and fabric-covered buttons. You can also use other things.....I would love to be able to understand how to do this. I pray one day I can make one of these.....Enjoy............. I know the envelope will be well recieved. Great for birthdays too or a gift to a friend or grandmother.........
During this Christmas season many are alone and have lost loved ones.......if the loved ones were saved believe me they would not want to come back to earth. They loved you very much, but they would never want to leave JESUS. I pray that all that are alone will find peace in JESUS this Christmas.....when I was thinking about God today I went to Isaiah 40...one of my favorites in the Holy Bible. Here are some scriptures I love in Isaiah 40. This is the God we serve.

God gives us comfort....peace....the grass withers and the flowers fall but the word of our GOD stands forever. See, the Sovereign Lord comes with power, and his arm rules for him. He tends his flock {we the saved are his flock} like a sheperd.....He gathers the lambs in his arms and carries them close to his heart {that is us the saved ones}; he gently leads those that have young. Who has measured the waters in the hollow of his hand, or with the breadth of his hand marked off the heavens. Who has the dust of the earth in a basket, or weighs the mountains on the scales and the hills in balance.........

DO YOU NOT KNOW? Have you not heard? Has it not been told you from the beginning? Have you not understood since the earth was founded? HE {GOD} sits enthroned above the circle of the earth, and its people are like grasshoppers. HE {GOD} stretches out the heavens like a canopy, and spreads them out like a tent to live in. He brings princes to naught and reduces the rulers of this world to nothing. "TO WHOM CAN YOU COMPARE ME? OR WHO IS MY EQUAL"" says the HOLY ONE. Lift your eyes and look to the heavens: WHO CREATED ALL THESE? He who brings out the starry host one by one, and calls them each by name. BECAUSE OF HIS GREAT POWER AND MIGHTY STRENGTH not one of them is missing.

This is theGod that loves you and will carry you if you let him. The God we serve is loving and peace and gentle and kind, slow to anger.........{this is in other scriptures in other books in the bible}.

Do you not know? Have you not heard? The LORD is the everlasting GOD, the CREATOR of the ends of the earth. He will not grow tired or weary.....and his UNDERSTANDING no one can fathom. He gives strength to the weary and increases the power of the weak. Even youths grow tired and weary, and young men stumble and fall: but those who hope in the Lord will renew their strength. They will soar on wings like eagles; they will run and not grow weary, they will walk and not be faint. THIS IS THE GOD WE SERVE. {Scriptures from Student Bible Isaiah 40.}

So this Christmas remember you are not alone at all........Your saved loved ones are with JESUS and they are very very happy........they are wanting you to serve Jesus. If you are not then get your heart right with JESUS.........ask him into you heart and ask for the forgiveness of your sins and believe that God sent his son so we could have life.........believe he died on the cross for your sins........and rose the third day.........believe in the Father Son and Holy Ghost.......and ask JESUS to be your Lord and Savior and he will. No matter what you have done.....DO NOT BELIEVE THE LIES of the evil one satan.........you will be forgiven no matter what you have done. If you do this..........your name will instantly be written in the LAMB'S BOOK OF LIFE........heaven will be your final destination.....if you stay in love with JESUS and read the word and serve him........reading the word is JESUS talking to us....the HOLY BIBLE is alive.....we pray talking to JESUS and we read the word so he can talk to us......and you will live forever with JESUS and family and friends.......no sorrow....no tears.......healthy and whole.......forever and forever and forever........NO ENDING..........Blessings to you and your families and friends..........Merry Christmas.........

Chocolate Mint Shortbread Cookies

1 {7 1/2 oz} package chocolate-covered mint patties
1 {7 1/2 oz} package of shortbread cookies
1 to 2 teaspoons milk {optional}

PUT the patties in the top of a double boiler over barely simmering water and stir until melted and smooth. REMOVE from heat. IF the frosting is too thick to spread, stir in 1 to 2 teaspoons milk. FROST the shortbread cookies with melted patties. LET the cookies stand on waxed paper until the frosting sets. {Victoria 1993} To give as gift.......place in a pretty tartan pattern tin.....or a pretty Christmas Tin. This is great for birthday gifts and Valentine's Day too.

Peppermint Cookies

My cousin Pam went to a very festive party Saturday night and here is one of the treats they offered.

Make your sugar cookie recipe or buy the sugar cookie dough ready to bake.......as you roll out the dough or slice the dough.....if you are using cooking cutters or just slicing the dough, add crushed peppermint........bake and then when cooled drizzle chocolate sauce over the cookies.

Pop Corn Balls

1/2 stick unsalted butter
1 {10 oz} bag marshmallows
1/4 cup light brown sugar
3 quarts popped popcorn

In a large heavy pot , melt the butter over low heat. ADD the marshmallows and brown sugar and stir until melted. REMOVE from heat. PLACE the corn in a large bowl and pour on the marshmallow mixture; toss well. BUTTER your hand and shape the corn into balls of whatever size you desire. SET on wax paper to dry. Place in pretty bags. {Recipe by Martha Stewart}. I worked with Martha in 1997 and she is a delight to work with. I was honored to be a part of a luncheon she was involved in. Her menu was extensive with great things......our hotel chef's created exactly what she wanted. I wish I could remember what we had. It was delicious I know.

Decorate

Add confetti to your Christmas dinning table. One year I hollowed out apples and put my taper candles in the apple. I did not hollow out all the apple. Really look pretty.

Place pecans or walnuts in a bowl with a nutcracker on tables for guests.

Pick up a Christmas Memories book for this Christmas...it is fun to enter all you do.

Grapefruit and More Grapefruit

The season is here for many fruits. I love Grapefruit. I could not have grapefruit for 5 years due to the medicine I was taking. How grateful I was to not take that medicine anymore. Now I enjoy this delicious fruit. Be sure to talk to your pharmacy.....precious grapefruit can't be in your diet with certain medications. Did you know:
1 medium pink, red, or white grapefruit contains: 82 calories, 3 grams fiber, 356 mg of potassium, 88 mg vitamin C, and 2.096 mcg. of lycopene.{nutritional profile from Vegetarian Times, January 2009}. Vegetarian Times also tells us that even though grapefruits might look the same they are not. Those that feel heavy in your hand will be the ripest and juiciest. I used to broil my grapefruit with brown sugar or sugar.....the ones I bought last month were not good for eating and I was really disappointed so I like Simply Grapefruit Juice. I hope you can find some really great grapefruit this season and they are good in gifts baskets too.

Different Dip

Sweet Chili Mayonnaise
1 cup mayonnaise
1/4 cup vegetarian sweet Thai chile sauce
2 teaspoons toasted sesame seeds

Whisk together all ingredients. Refrigerate until ready to use.
Makes 1 1/4 cup.

Herb-Roasted Winter Veggies

Gluten free and vegan

2 cups bite size cauliflower florets, each halved lengthwise
2 cups halved Brussels sprouts
2 medium carrots, cut into sticks
1 medium yam or sweet potato {1/2 pound diced}
2 tablespoons garlic infused olive oil divided
1 tablespoon chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 tablespoons chopped fresh parsley
2 teaspoons lemon juice

Preheat oven to 450 degrees. PLACE cauliflower, Brussels sprouts, carrots, and yam in large bowl. ADD 2 tablespoons oil, rosemary, and thyme, and toss to coat. SEASON with salt and pepper, if desired. SCATTER vegetables evenly on baking sheet, and roast for 20 minutes, turning 2-3 times with spatula. INCREASE oven temperature to 500 degrees, and roast vegetables 10 minutes more, or until tender. TRANSFER vegetables to large serving bowl, and add parsley, lemon juice, and remaining 1 tablepsoon of olive oil. Toss to mix..serve. Serves 4.

Udate on Calcium Citrate and Magnesium

I have said in the past due to research that Magnesium and Calcium needs to be seperate but after hearing Dr. Carolyn Dean who wrote "Magnesium the Miracle", she states that God made our leafy greens with calcium and magnesium so I agree with her it is fine to take together. Check with your doctor or pharmacy. I am going to take mine together from now on.

Glazed Cornish Hens

4 Tyson Cornish Game Hens, thawed
2 tablespoons olive oil
1 {16 oz} can of jellied cranberry sauce

Preheat oven to 425.
Wash hands, Roast hens, basting occasionally with olive oil, 35-45 minutes or until done {internal temperature of 180F}.

Glaze: Heat cranberry sauce in small saucepan until melted. Remove hens from oven when done. Spoon cranberry sauce over hens before serving........Tyson Foods. I am going to add heated cranberry sauce over my roasted chickens.

White Chocolate from Dunkin' Donuts

3 cups whole milk
8 {oz} of white chocolate, you can cut to tiny pieces or breakup
1/4 tsp. vanilla extract

Warm milk in medium sauce pan over medium-high heat, whisking occasionally, for 5 minutes. Remove pan from heat and stir in white chocolate, whisking until melted smooth. Stir in vanilla and place in mugs. Top with whipping cream. Serve hot. Calories 556 {Its Christmas} 35mg. chol. no fiber, 12g pro. 56 carbs and 166mg sodium. {All You Magazine} You can switch to low-fat milk instead of whole milk and save 123 calories and 17 grams of fat.

Use fresh green pine and fresh fruit in pretty big bowls..on your table as a centerpiece. Your guests will love the choice of fruit and we are supposed to eat fruit first not after dinner to get the best benefits from what God made for us.

For The Bird Lover

Give them a subscription to Birds and Blooms. They usually have a special where you can have a subscription and you can buy one for your friend or loved one at a better price. Give them a bird feeder along with birdseed.......you can make a copy of the cover of Birds and Blooms and let them know their monthly gift is on the way. If they are disabled.....take them by birdseed for the first three or six months after Christmas. It will be well enjoyed if they have a great view to see the birds.

Shop Safe This Christmas

First, Pray for JESUS to keep you safe.....keeping you under a hedge of protection. Don't carry out a lot of bags at once. If its after dark, have the security person walk you outside and always park by a bright light. It is best to take a friend shopping with you especially at night time. Only take out your credit or debt card when you are to swipe the card and watch around you. Go only to ATM's at banks. Thieves can use camera phones to record what you are putting in on the ATM you are using. I prefer to go by my bank. You can put all things in one bag. Make sure your debt card or credit is swiped only once. If they leave with your card..go to the manager or follow them. I would follow them first. Keep your purse at your side and if you are in a store like Walmart or Kroger or Target...fasten your purse to the child seat buckle and keep your purse zipped. Swiss Chicken

6-8 chicken breasts
Swiss cheese slices {1 per chicken breast}
1 can cream of chicken soup
1/2 cup milk
1 box of herb or chicken stuffing
1 stick of butter

Lay chicken breasts in 9x13 pan. Place cheese slices on top.
Mix soup and milk in saucepan until warm.
Pour over chicken and cheese.
Sprinkle stuffing mix evenly over top. Melt butter and drizzle on top. Cover with foil and bake at 350 degrees for 50 minutes. Start checking with in 40-45 minutes. Enjoy

Ideas For Christmas Gifts

Most people don't buy sheets as much as they should. Give a gift of sheets and put in a bath towel or two and nice wash cloths. Wrap the gift even in clear plastic and add ribbons and ribbons to make this gift really special.

If someone loves to write.......basket or box of journals and a pretty pen with pretty notepaper and include stamps.

Legacy and Destination

Me and my family have been left a legacy.....Our great aunt Audra Czarnikow wrote a beautiful song, perhaps you have heard it, GOD WALKS THE DARK HILLS. This song was recorded in 1965. I want to put the lyrics on my blog for you to see the entire song.......Ray and Laura Lewis are the only ones I know of to date that sing this song just like Audra wrote it. The Happy Goodman Family made this song famous but they left out the second chorus and we don't know why. I saw them in concert November 30 and felt so honored to meet them. They love the Lord and are the sweetest couple. I was so happy to meet the man that recorded this song for the first time. Ray Lewis and he and his wife Laura travel the roads witnessing for JESUS and singing gospels songs....just one of the things they do for our Lord.

When I was in the audience the people did not know that I was the great niece to Audra Czarnikow, they were going to introduce me after they sang the song. I was taken back with tears in my eyes when Laura started singing the song and people stood up raising their hands to JESUS when she started singing God Walks The Dark Hills. What a legacy. Here are the words:

Destination, I knew thought nor would my family including Audra, that I would never have met Ray Lewis. Just like in our lives, if we live for JESUS we have a Royal Destination. We never know where the Lord is going to place us. We can be sure its for his GLORY. He will always make a way for us.

Another Legacy, words our family have left for us. My grandmother was with me during my pregnancy, also my papo and Aunt Audra Czarnikow and of course my mom and family.......I know many prayers were prayed for my pregnancy and life of my son, Christopher. A few weeks ago I took my grandmothers bible to church....I usually keep on the desk or night stand because this bible of hers is so precious to me. Our pastor asked us to turn to Exodus Chapter 12.........as I was reading along with the pastor I noticed on the next side of the page verse 13 was highlighted by a pen mark and my grandmother wrote on the side.....Exodus 12:13 prayer for Christopher on prayer cloth. For those that are in the Assembilies of God and Pentecostal know about "prayer cloths". My family always prayed....all through my life and I would tell everyone my grandmother, grandpa and Aunt Audra had a hot line to heaven. But we all have that resource.....we can go directly to JESUS CHRIST for our prayers and praises.......for our THANK YOU JESUS for all you have done for me, the good and the bad........Good will always come out of something bad if you live for JESUS. I pray that you start working on a legacy for your children and family. And remember we can have a good destination if we serve JESUS.

Pam's Crockpot Dressing

1 {8 inch} pan cooked corn bread
8 slices day old bread
4 raw eggs
1 medium onion, chopped
1 teaspoon salt
1/4 teaspoon black pepper
2 cans cream of chicken soup
1/4 cup chopped celery
1-1/2 tablespoons sage or poultry seasoning
2 cans of chicken broth
2 tablespoons margarine or butter

Break up breads. Mix everything together EXCEPT margarine or butter. Pour into crockpot and dot top with margarine or butter. Cover and cook on low for 4 hours or on high for 2 hours.

Best if you cook chicken and use the broth from the chicken instead of canned broth.
Makes 16 servings. Enjoy!

Peanut Butter Cornflake Bars

2 cups sugar
1 cup light corn syrup
2 cups peanut butter
8 cups cornflakes

Spray cookie sheet with non-stick vegetable spray. IN a large sauce pan, bring sugar and corn syrup to a boil over medium heat. ADD peanut butter and stir until well blended. REMOVE from heat and add cornflakes, stirring until coated. QUICKLY spread onto the prepared cookie sheet. LET set until firm. Cut into squares. YIELD:28-32 bars. {Southernlady Magazine 2005}

Victoria's Chili

1 pound of Lauras ground beef....no hormones
1 {15oz.} can tomato sauce
chili powder
1 can pinto beans
1 can of black beans
minced garlic
sea salt and pepper
What's This Seasoning no msg
Cavenders All Greek Seasoning salt free no msg
extra virgin olive oil cold pressed
Pur water

In a large saucepan.......add about one tablespoon of oil olive.....add 2 tablespoons of Pur Water{add what you like}....... slowly brown ground beef and add some minced garlic.......I love garlic so I add a bit more than normal.......add sea salt and pepper, tiny amounts, and add What's This Seasoning and Cavenders Seasoning.......and chili powder.....I just add what I think is good..you will get the taste right as you keep making this chili...I like more chili powdert than most so just add accordingly............simmer on very low heat and then I add one large can of tomato sauce, reuse the tomato can and fill with Pur water.........add black beans and pinto beans and simmer until well cooked and seasoned.......serve with sourdough bread or cornbread.........I don't measure I just toss the ingredients in and it comes out really great........enjoy! {Our mother made something like this chili and we loved it...I just put a spin on it}

Pancake Syrup

You can place this in a nice glass container and give with the pancake mix.

Strawberry Syrup
3 cups halved strawberries
3/4 cup water
1-1/2 cups sugar
1-1/2 teaspoons lemon juice
1 teaspoon butter

In a medium sauce pan, bring strawberries and water to a boil. LOWER heat and simmer for 10-minutes. STRAIN juice and return to pan. ADD sugar and lemon juice and bring to a boil again, stirring until sugar dissolves. ADD butter and continue boiling gently 2 minutes. SKIM off foam and pour syrup into desired jars. STORE in refrigerator up to one month. Yield: 4-half pints. {Southernlady Magazine 2005}.

Food Gifts in Containers

I love homemade food gifts. I just have not met anyone that gave them. So here are a few recipes for you from Southernlady Magazine 2005. You can search for pretty bottles and jars. Find other things to give with the food gifts.

Pancake Mix
3 cups all-purpose flour
1/4 cup sugar
2 tablespoons baking powder
1 teaspoon salt

In a large mixing bowl, combine flour, sugar, baking powder, and salt.
Fill a plastic bag with mix, tie with ribbon, and attach Preparation Instructions.

Preparation Instructions:
3/4 cup milk
1 egg
2 tablespoons vegetable oil {Use a healthier oil, I will use olive oil}
1 1/3 cups Pancake Mix

In a medium bowl, combine milk; egg, and oil. Stir in the pancake mix until moistened. Cook in a lightly greased skillet or griddle. Yield 10 {5 inch} pancakes.

Balsamic Glazed Brussels Sprouts with Crispy Bacon

4 slices thick sliced bacon {I suggest Turkey Bacon}
1 tablespoon of minced garlic
1/2 cup balsamic vinegar
1-1/2 tablespoons sugar
3/4 teaspoons salt
1/2 teaspoon ground black pepper
2 pounds fresh Brussels sprouts, halved

In a large skillet......I suggest cooking slow, cook bacon over medium heat for 15 minutes, or until browned and crispy. REMOVE bacon and crumble; set aside. RESERVE 1/4 cup bacon drippings in pan. ADD garlic; cook over medium heat for 1 minute. ADD balsamic vinegar, sugar, salt, and pepepr, stirring to combine. ADD Brussels sprouts, stirring to coat; cover and cook for 5 minutes. REMOVE cover, increase heat to medium-high, and continue cooking for 10-minutes, stirring frequently. GARNISH with crispy bacon. {Southenlady Magazine Sept?Oct 08}
