Honeyed Nectarines
4 nectarines, but into 1/2-inch cubes
1/4 cup honey
*In medium sauce pan, combine nectarines and honey. *Cook over low heat for 2 minutes until honey dissovles. *Increase to meddium heat and continue cooking additional 4 minutes. Serve warm or at room temperature. Would be nice over vanilla ice cream. {Southernlady Sept/Oct 2005}
Mascarpone Cheese Topping: Great with muffins
1 {8-ounce} package of mascarpone cheese, softened, you can use cream cheese
1/4 cup of powdered sugar
1/4 teaspoon vanilla extract
*In a small bowl, beat cheese, sugar and vanilla extract until smooth. *Store unused topping in refrigerator. Makes 1 cup.

TrufflesIngredients:
1 Bag semi sweet chocolate chips3/4 Cup condensed sweetened milk1 Tbsp. shortening1/2 Tsp. Cook's Choice Pure Vanilla Extract1/2 Tsp. Cook's Pure Red Raspberry Extract
Coating:6oz-12oz milk chocolate chips6oz white or dark chocolate, meltedChopped nutsCocoa Powder
Preparation:Melt the chocolate chips in a glass bowl over an inch of boiling water (or in a microwave safe bowl on 70% for one minute). Once smooth add the milk, raspberry extract, and vanilla. Cover and chill for 45 minutes. Scoop about small spoon fulls and roll to form round balls. Place on cookie sheet lined with wax paper. Refrigerate for 1-2 hours. Coat in melted milk chocolate, cocoa powder, or nuts (or any combo you prefer!). You can melt the white chocolate and add a drop or two of red food coloring to make it pink and drizzle over the truffles.

Decorating For Fall
*You can use pumpkins as centerpieces. Cut out the top of the pumpkin and remove seeds.......use the top for flowers.........use fall colors. Works great with mini pumpkins too.
*Votives everywhere........you can also do a tray of all white votives or pumpkin color........candles and more candles. Place on mirrors are really pretty too.
Take all of your vases and arrange with fall flowers and sticks.......anything to create outdoors inside.
You can take tall vases in tin and put fall flowers along with pumpkins that are mini and mini gourds with votives around, colored corn.......really looks pretty in the middle of a table.
*Refresh your silk wreath........Hobby Lobby should have some sales with flowers right now for fall.

3 CUPS flour, sifted
1/4 teaspoon baking soda
salt to taste
1 cup (2 sticks) butter, softened
3 cups sugar
1 cup sour cream at room temperature
6 eggs at room temperature
1/2 teaspoon almond extract
1 teaspoon vanilla extract
*Sift the flour, baking soda, and salt together. *Cream the butter in a large mixing bowl until light.*Add the sugar gradually,beating constantly until fluffy. *Beat in two of the eggs, one at a time. *Add the sour cream and mix well. *Beat in the remaining eggs (4), one at a time. *Add dry ingredients gradually, beating constantly until well mixed after each addition. *Add the flavorings. *Spoon into a greased and floured tube pan. *Bake at 325 degrees for 1 1/2 hours. *Cool in the pan for 10 minutes. *Remove to a wire rack and cool completely.
